From Our Maple Trees to Your Family Table
Each step of production is handled with care and precision to make sure you get the purest quality maple syrup
Tapping the Trees
Before each season begins, all of our maple trees are prepared with a fitting called a tap, which is newly drilled into the trees each season. These taps are all connected via pipelines, which allow the sap to flow to a central collection point.
Most of our maple trees get one tap each, while some of the larger trees have two. We are proud to have grown to just over 1000 taps on our farm since we started in 2016.
From Sap to Syrup
The sap in the maple trees starts to flow when the outside temperature is above freezing during the day and then freezes again at night. The sap will continue to run as long as the freeze and thaw cycle continues.
Once the sap is collected, we haul it to the sugar shack for processing. The sap goes through three different processes to transform into the deliciously sweet maple syrup we all know and love:
First, we put it through a reverse osmosis machine to start the concentration process.
Then the concentrated sap goes into our wood-fired evaporator until most of the water is boiled off and the sugar is concentrated to the correct density.
Finally, our syrup is filtered and packed in barrels or poured into bottles to sell.
From Syrup to Sugar
To create our maple sugar, we boil pure maple syrup past its normal finishing point until most of the water evaporates. As the thickened syrup cools, it’s rapidly stirred, causing it to crystallize into fine sugar.
Bourbon Barrel-Aged Syrup
To produce our bourbon barrel-aged syrup, we start with our 100% pure Grade A dark maple syrup. It goes through three phases before it’s ready to be bottled for enjoyment:
First, the syrup is heated through and pumped into freshly emptied oak bourbon barrels. The syrup then ages in these barrels for several months.
While it’s aging, the syrup extracts a variety of flavours from the barrel’s interior such as bourbon aromatics, toasted oak, vanilla and caramelized sugars.
Once the aging process is complete, the syrup is removed from the barrels, heated and filtered, and then filled into glass bottles.
There is no noticeable amount of alcohol in the syrup, as the flavour comes from the barrel, not the bourbon.

Maple syrup has four different grades, based on their colour and the flavour intensity. These grades reflect how much light the syrup transmits when they’re produced during syrup season.

Table syrup for your pancakes, waffles or French toast - choose amber or golden if you’re looking for a lighter, classic maple syrup flavour.

An additive to your hot drinks, such as coffee or tea
Homemade salad dressing
Dark, very dark and bourbon barrel-aged syrup are best used for:
Table syrup for your pancakes, waffles or French toast - choose dark, very dark, or bourbon barrel-aged if you want a bold maple flavour.
Baking or cooking glazes and sauces such as bread pudding, pecan pie or baked apples
Savoury dishes such as BBQ sauces, baked beans
Commercial or industrial food production
Cocktails such as old fashioneds or espresso martinis
Maple Sugar
Maple sugar is light tan in colour and comes as dry, fine granules similar to the texture of brown sugar.
