Maple Honeycomb
Recipe adapted from Ontario Maple
Time required
45 minutes total:
15 minutes to prepare
30 minutes to cool
Ingredients
1 – 1/4 cups sugar
1/2 cup Milestone Ridge golden or amber maple syrup
1 tablespoon baking soda
1 teaspoon flaky sea salt
Steps to Prepare
Line a baking sheet or pan with greased parchment paper.
In a medium heavy saucepan, combine the sugar, maple syrup, and 1/4 cup cold water.
Heat, stirring, until the sugar dissolves. Once the sugar has dissolved, avoid stirring and swirl the pot occasionally instead.
As the mixture comes to a boil, regularly insert a candy thermometer until it registers nearly 300 degrees Fahrenheit (between five and seven minutes).
Quickly remove the pot from the heat and whisk in the baking soda.
Immediately pour the mixture onto the baking sheet and scrape the pot with a spatula. Don’t smooth the mixture or you will get rid of the air bubbles!
Sprinkle the surface of the candy with the flaky sea salt.
Let the mixture cool.
When cool and hard, break the honeycomb apart into chunks with your fingers.
How to Store
We recommend storing your honeycomb in an airtight container. It’s best enjoyed within 1-2 weeks for peak freshness.
